Imagine dining at 58˚ North latitude, nestled inside the walls of a 300-year-old fort, awe inspiring northern lights above and a delectable world-class meal on your plate. This is RAW:churchill, a gastronomy adventure like no other. In collaboration with Frontiers North Adventures and Parks Canada, we are providing this unique culinary experience in Churchill, Manitoba taking place March 2-10.

At RAW:churchill, guests will enjoy a meticulously curated menu prepared by Chef Mandel Hitzer, which features courses inspired by regional delicacies from land and sea.

The adventure begins in the town of Churchill as guests embark on an official Tundra Buggy® and travel across the frozen Churchill River to Prince of Wales Fort National Historic Site, where the women and men of the Hudson's Bay Company resided more than 250 years ago. 

Once there, protected from weather and wildlife by the fort's thick stone walls, guests will experience fine cuisine and spirits in a heated transparent-roof 'pop-up' restaurant, designed by RAW:almond co-founder and designer Joe Kalturnyk. 

Churchill is located directly under the auroral oval with northern lights occurring up to 300 nights of the year; the RAW:churchill structure has been designed purposefully with a transparent roof to take advantage of the opportunity for guests to dine while the northern lights dance overhead.

Post-dinner, guests will board the Tundra Buggy for the return trip to the town of Churchill, stopping to view the northern lights when the opportunity arises.
